Charred tomato ragu with charred green beans

Ingredients

For the ragu

  • 1 14 oz can of peeled cilegni tomatoes

  • 1 pint of cherry tomatoes

  • 1 each shallot

  • 2 each garlic

  • 3 tablespoons Garlic oil

  • 2 tablespoons balsamic reduction

  • 1 each basil

  • Salt

  • 3 each Garlic confit

  • 1 tablespoon of earth balance or unsalted butter.

For the green beans

  • Water

  • Ice

  • A knife

  • A pan

  • Maras pepper

Place 2 cups of balsamic vinegar and reduce it to 2 tablespoons. Take a handful of garlic cloves, cover with olive oil, bring to a simmer and rest till fork tender. This makes garlic confit. Open your can of cilegni tomato’s and place them in a shallow pan. Add your cherry tomatoes. Add salt, garlic confit, garlic oil, garlic cloves, balsamic reduction and shallots. Mix together with salt and put in a 400 degree fahrenheit oven. Roast for 30 min till charred on top. Take out and mix together with the butter or vegan butter. I like to leave a sprig of basil in the pan once it is cooling. Take your green beans and trim the ends off. Bring a pot of salted boiling water to a simmer. Take an ice bath, which consists of ice, water and salt and put that on the side. The salt will lower the temperature of the ice water and season it. Drop your beans in the pot while it’s at arapid broil. Leave them in there for two minutes total. Remove and place in the ice water. The result will be a crispy and very green colored product. If it’s yellow beans they will be even brighter. Remove once cold and pat dry of all water. In a separate pan get it so hot that smoke comes out of it. Or that it’s gonna catch on fire. Put in a dash of garlic oil and salt. Then add your beans. Sear on each side till charred. Make sure your tomatoes are hot and place them on the bottom of a dish. Add your beans on top and some vegan parmesan or real stuff. Add the maras pepper which brings a fruity sweet saltiness to the product.
